Prickly Pear Cocktails


There is this Mexican restaurant in Falmouth that I love to go to every summer. Not only is their food amazing, but they also make a really mean margarita. Their prickly pear one is my favorite! It's not on the menu anymore but if you ask them they'll make it. I saw some prickly pears in the grocery store the other day, picked them up and decided to whip up some cocktails. They add a soft fruity, kind of exotic flavor to your drinks and a really beautiful color.

Coconut Prickly Pear Mojito
4 mint leaves
2 tsp sugar
2 oz coconut rum
1 oz lime juice
3 oz prickly pear juice*
soda water

You want to put your mint leaves and sugar in a glass and muddle them together. Then add your rum + lime juice + prickly pear juice and stir. Fill the glass with ice and top with soda water. Enjoy!

*I have heard that you can buy prickly pear syrup to make drinks but I always think drinks taste better when you use fresh real ingredients. So I just cut the ends of the prickly pears and pealed them. Then I threw them in the Vitamix and pureed them and strained the seeds out.


Prickly Pear Margarita
1 1/2 oz tequila
1/2 oz cointreau
1/2 oz lime juice
2 oz prickly pear juice

Throw all your ingredients into a shaker with a good amount of crushed ice and shake then strain over your margarita glass. Optional: Before you fill the glass go around the rim with a slice of lime and dip in salt or sugar.

  4. I've never had a prickly pear, but I have to say, they look a lot tastier than I thought they would be! Maybe I'm bias due to my love of pink? Do they actually taste like regular pears, or are they completely different?

  6. I REALLY thought prickly pear was just a funny name for a margarita! I never knew it was an actual fruit! I am officially on a mission to find prickly pears and put your awesome recipe to use!
